Very Berry Dreamboat Parfaits

Very Berry Dreamboat Parfaits

You'll Need: medium bowl, 2 mid-sized glasses
Prep: 5 minutes
Chill: 20 minutes

1/2 of recipe (1 parfait): 212 calories, 2.5g fat, 742mg sodium, 34g carbs, 3g fiber, 12.5g sugars, 11g protein

Ingredients:

  • 2 tbsp. Jell-O Sugar Free Fat Free Vanilla Instant pudding mix
  • 2 tbsp. Splenda No Calorie Sweetener (granulated)
  • 1/4 tsp. vanilla extract
  • 1 cup Cool Whip Free (thawed)
  • 1/2 cup fat-free cream cheese, room temperature
  • 1/2 cup raspberries
  • 1/2 cup sliced strawberries
  • 1 sheet (4 crackers) low-fat graham crackers, lightly crushed
  • Optional topping: Fat Free Reddi-wip

Directions:

In a medium bowl, combine pudding mix, sweetener, vanilla extract, and 1/4 cup cold water. Stir vigorously.

Add Cool Whip and cream cheese, and stir until completely smooth. Cover and refrigerate until chilled, at least 20 minutes.

Evenly distribute raspberries between 2 mid-sized glasses.

Evenly distribute half of the pudding mixture between the glasses, about 1/4 cup each.

Repeat layering with strawberries and the remaining half of the pudding mixture.

Evenly distribute the crushed graham crackers between the glasses. Enjoy!

MAKES 2 SERVINGS

HG Alternative: Swap out the Splenda for the same amount of granulated white sugar, and each serving will have 254 calories, 45.5g carbs, and 25g sugars.
